So like most people, I
hated (Past tense!) Brussels sprouts all my life. Perhaps it was some trauma
when I was younger, except I’m not too sure about that. When I was little, my dad
tried to make me eat hard-boiled eggs and I threw them up immediately. Now I
eat like, a dozen a week. But I digress.

So I went through life hating Brussels sprouts
until a co-worker of mine, who is a dietitian, held a cooking seminar about
Thanksgiving dishes. One was a cheesy Brussels sprouts dish and I decided to
try a sprout at the last minute. And you know what? I didn’t hate it. I didn’t
die. I didn’t gag, nor did I puke. I kind of…liked it. Then the other women in
the cooking class started to talk about how they like to cook their Brussels sprouts.
Soon after the class I ran
out and grabbed some Brussels sprouts and made them and OH EM GEE you guys. I
can’t get enough. They are so good. I wouldn’t lie to you. Some people say they
like to get these nice and salty like French fries, but I wouldn’t recommend
that if you were watching your sodium intake. I like to toss on extra Parmesan
cheese after they’re done. And then I chow on them like popcorn while I’m
watching TV. Except with these, I don’t find kernels in weird places.
Winter is the perfect time
for these since they’re in season, so go make ‘em! I didn’t add measurements
because I just eyeball everything for this.
Ingredients:
-Brussels sprouts
-Olive oil
-Olive oil
-Salt and pepper
-Garlic
-Parmesan cheese

Instructions:
1. Preheat oven to 425
degrees. Cut ends off of Brussels sprouts and then slice in half. Remove any loose leaves. Place in a bowl.
2. Lightly drizzle the sprouts with olive oil and toss to coat. Sprinkle with salt, pepper, garlic, and Parmesan cheese.
3. Spread the sprouts in an even layer on a baking sheet. Cook for 35-40 minutes. If you want, shake the pan a bit from time to time for more even cooking.
